I've been trying to find some interesting and inspiring recipes recently that work within the limits of my diet. No gluten, no grains and low starch is a challenge. Root vegetables are starchy, but I limit how much I eat and eat them infrequently. Today I tried this parsnip fry recipe. You just slice up the parsnip, coat in olive oil, some salt and pepper and spread them out on a cookie sheet. Bake at 375 10 minutes, turn over and another 10 minutes and that's it! Hubby gave them a big thumbs up! I was satisfied to only eat a small amount, they have a lot of texture and flavor--it was enough to satisfy my craving!
